The team at Euro Catering is delighted to have delivered the second part of a two-phase project for D&D restaurants, in which we partnered with food service design house, HK Projects, based in Sheffield.
Palux is just one of our many European catering equipment brands and German-manufactured Palux Topline equipment has fittingly been installed on the ground floor of landmark fine-dining venue, the German Gymnasium, in King’s Cross, London.
Phase one of the project was completed earlier this year, when we supplied Palux equipment for installation on the first floor of the Grade II listed building. The ground floor installation, just completed, was far more challenging.
HK Projects managed the whole mission, removing the previous equipment and installing the new over the course of two consecutive nights, so as to not cause business interruption at the eatery. Work started at 11pm on both nights, so restaurant staff could be back in and able to start their day at 6am, working to their usual routine.
The equipment we supplied consisted of four cookblocks, each with refrigerated drawers beneath – something not all suite manufacturers can offer. All were mobile, at the executive chef, Bjoern Wassmuth’s request, so that they could be moved for ease of cleaning.
The Palux cookline included induction hobs, vario cooker, fryers with oil pump and 3-stage filtration and a new addition to the Palux range – an 800mm-wide electric steak grill.
As one of the busiest, if not the most patronised restaurant in the Kings Cross area, the German Gymnasium needed durable and flexible equipment, to cope with the demand of a 1000-cover-per-day restaurant. The eatery starts service with breakfast, served from 8am, and then handles demand for brunches, lunches, afternoon teas and dinners, cooking and preparing dishes from over 8 different menus.
Having already reaped the benefits of the Palux Topline equipment on its first floor, it had no hesitation in wanting to fit out its ground floor kitchen with the same high quality and user-focused equipment in its second kitchen.
Our sales director, Justin Towns, says: “This is the sixth project in 18 months for which D&D has chosen to purchase Palux equipment, which speaks volumes about the efficiency and capacities of this durable range of suites and equipment.
“We were delighted to work with HK Projects once again, helping to deliver a highly challenging kitchen refit and new concept – and all within rigid time restraints. The Palux suites make a real difference to the working capacities of a kitchen, as the German Gymnasium has already found with regard to its first-floor kitchen. With the ground floor now just as efficient, life should be much easier for the busy kitchen team.”
