Suite Helps Manchester Eatery Be Energy-Efficient

Euro Catering and HK Projects have worked together to deliver a single-suite, professional island solution, in the kitchen of an ultra-modern, 190-cover city centre eatery in Manchester.

The solution is now installed in prestigious new Manchester restaurant, Grafene, which is named after the world’s first 2D material, which was isolated at Manchester University.  An ergonomically-designed, heavy-duty single suite island, complete with zone-control induction hobs and a stylish plancha, is now not only serving everything from brunch to a 7-course tasting experience, but also delivering energy and process efficiencies, ticking all the boxes of HK Projects’ brief.

Originally, HK Projects proposed a ready-to-install fabricated island with drop-in components, but turned to Euro Catering when it learned that the fabrication of this island would take 8 weeks.  Euro Catering proposed a ready-to-install Palux single-suite solution, with unique connecting system, to complement the cook suite, knowing this would be available within five weeks.

This gap-free solution ensured that after-service clean-down of the stainless steel island would be quick – fulfilling an important part of the brief.

Euro Catering also supplied a Giorik electric salamander grill, which reaches 200°C in 20 seconds, as this exceeded the technical specification of the brief, whilst also matching the build and vision of the Palux modular system. This switch-on-and-use grill, along with the use of induction hobs, take a lot of heat out of the kitchen, but has another advantage.  Immediate heat-up keeps bills in check, with no negative impacts on service.

The stylish German-manufactured Palux Vario range is used by Grafene’s chefs for both the contact cooking of meats and vegetables and the pan-cooking of food on its solid top.  The ‘Twingo’ configuration maximises the use of available space, due to having dual-sided controls that drive operational efficiency and make food service simpler and swifter.
