New Japanese Restaurant Enjoys Induction With Palux

New Leeds-based fine dining and Japanese-themed restaurant, Issho, is already delighting diners with a contemporary Japanese menu and exciting front-of-house culinary insights, thanks to bespoke Palux cooking suites supplied by Northants-based Euro Catering and installed and managed by HK Projects from Sheffield.

The new restaurant – the third D&D restaurant within Leeds city centre – is a £165 million, 7807 square foot development located within the Victoria Gate Centre.  With a kitchen team headed up by executive chef, Ben Orpwood, its menu is based around delicate and authentic Asian dishes, served up through a combination of behind-the-scenes efficiencies and front of house food theatre.

To achieve this balance, the client wanted a front-of-house, variant-filled Palux cooking suite.  To suit the demands of Issho’s menu, this was designed, for this particular client, with four-zone induction, an oven and two custom-made Robata grills.

The attractive and highly efficient flame grills are housed behind a glass screen, to allow diners to derive delight from chefs preparing the Japanese dishes that are soon to appear on their plate.  This enables them to feel more engaged with their food, increasing satisfaction levels and heightening their overall experience.

In the kitchen, the main Palux island consists of fryers, induction hobs, plancha and a modified Palux Vario Pan component, tailor-made for Japanese cuisine.  This contains both dipping wells and frying with thermostatic restriction, which makes them ideal for the frying of Japanese tempura dishes.

The suites provide Issho with high quality equipment that also include energy-saving technology.  This keeps costs down, without compromising on the quality of the overall dining experience.
